Gordon Ramsay’s chocolate and avocado mousse recipe

While many people would think that an avocado would only be part of a savoury dish, chef Gordon Ramsay turns that notion on its head. In his cookbook, Gordon Ramsay’s Ultimate Fit Food, he shared his super simple recipe that makes an avocado part of a chocolate mousse.

While the flavour combination might seem otherworldly, the Michelin star chef must know what he’s talking about. Mixing raw cacao powder with avocado and another sweetener, namely sugar, can lead to spectacular results – especially with the addition of vanilla extract. Here’s how to make Gordon Ramsay’s adventurous chocolate and avocado mousse in as little as three steps.

Chocolate and avocado mousse

Ingredients

Two large ripe avocados, peeled and stoned

Four tbsp runny honey, to taste

One tsp vanilla extract

50g raw cacao powder

Method

1. Blitz the avocados in a food processor until smooth.

2. Add three tablespoons of honey to the food processor, as well the honey, vanilla extract and cacao powder and blitz again until combined.

3. Spoon the mousse into either shot glasses, wine glasses or another serving dish – then place them in the fridge for an hour before serving.

Tips

Gordon Ramsay said: “Because honey is so sticky, it can be difficult to measure it accurately.

“If, however, you coat the measuring spoon with a thin layer of flavourless oil like groundnut, it will slip right off.”

This means you can ensure an accurate measurement of the honey by simply dipping the spoon in groundnut oil before each spoonful.

Plus, in this recipe, you can add as much honey as your taste desires, so if you would like a bit more, you can always taste the mixture when it’s in the blender before refrigerating it.
