Nothing is better than waking up at the weekend and cooking a hearty fry up for breakfast, but it is disappointing if your fried eggs become charred and cracked. Fried eggs might seem like a simple recipe to make, but if you just use oil or butter it will take longer for the top to cook.
This can result in the white edges becoming burned before the top sets, which leaves the yolk undercooked and even slimly if you are not careful. Instead Joanne, a expert from Fifteen Spatulas, says getting fried eggs to cook evenly and become up crispy is very easy: as all you need is a little bit of bacon.
Joanne explained: “I have been making eggs this way for years and had no idea it was a ‘thing’ until recently.
“In my family, we affectionately called these ‘bacon fat splashed eggs,’ as we would often cook up a large skillet of bacon strips, and crack eggs into the hot leftover bacon grease in the pan, using a spatula to swish the hot fat over the eggs.”
If you love bacon then you will be delighted to know that cooking it in a frying pan before adding your eggs is the key to making a perfect fried egg.
Basting is a simple cooking technique of spooning fat over the eggs as the cook to help the yolk cook at the same time as the whites without having to flip it.
Bacon grease is the best fat to baste as it has a very high smoke point which means it distributes heat well so the eggs will cook more evenly.
Not only it is convenient but bacon fat has lots of flavour to add a richer and more savoury taste to your fried eggs which helps makes them much tastier.
How to make fried eggs tastier and crispier
To begin, simply cook your bacon first, set it aside on a plate and use the unwashed frying pan to cook the eggs.
Make sure there is enough bacon fat to coat the bottom of a frying pan (roughly 60ml) to baste the eggs.
Heat up the pan on a medium-heat and once the fat is sizzling add your eggs. Make sure only to add one or two to a pan while cooking to avoid overcrowding.
Use a spatula to carefully scoop the bacon fat and drizzle it on top of the egg as it cooks. Alternately, you can move the pan to so the fat splashes over the egg as it cooks.
Cook for a few minutes until the eggs are perfectly cooked, then place on a paper towel to absorb any excess fat.
Season with some salt and pepper, your perfectly crispy fried eggs are now ready to serve.
