Method
Melt the butter in a large saucepan on a medium heat.
Add the onions and cook slowly to caramelise. This will take time, but it’s the star of the show so it’s worth it. When the onions start to turn brown, turn the heat to low and keep stirring so they don’t catch.
Onions should be caramelised after about an hour.
Once carmelised, stir in your garlic, white wine and vinegar. Turn the heat to high and cook until liquid has nearly evaporated, about 5-6 minutes. Be sure to scrape up any browned bits on the bottom and sides of the pan.
Add your beef stock, water and thyme then stir in your pasta.
Bring to a boil then turn down low and let simmer for ten minutes or until pasta is tender.
Stir in your cream, then your cheese and continue stirring until melted.
Serve with additional thyme leaves for garnish and freshly cracked black pepper.
