'Delicious and impressive': Roasted cauliflower recipe is the ultimate healthy dinner idea


Healthy dinners don’t have to consist of flavourless ingredients, in fact, any vegetable can be turned into something delicious with the right seasoning.

Whether it’s a simple dry flavouring or a thick, rich sauce, there are plenty of options when it comes to levelling up simple foods like cauliflower.

Chef Lisa Marley (@lisamarleychef on Instagram) has the perfect recipe for those looking for a healthy, enjoyable meal.

Speaking exclusively to Express.co.uk, she said: “Cauliflower is a nutritious vegetable that is low in calories and high in fibre, vitamins, and minerals. By using roasted cauliflower as a centrepiece, you can incorporate a healthy and nutritious option into your meal.

“Roasted cauliflower makes a great centrepiece because of its visual appeal, size, versatility, nutritional value, and ability to complement other dishes. It can be a delicious and impressive addition to any meal or gathering.”

Roasted cauliflower recipe

Cook the whole cauliflower for just 10 minutes in a pan of boiling water, then drain and dry steam it in the pot for an extra 10 minutes.

Mix the spices and oil in a bowl then add the cooked cauliflower to coat it.

Place on a lightly greased baking tray and bake for 20 minutes, or until cooked through with a lightly golden colour.

In the meantime cook the couscous as per instructions on the packet, then set aside while preparing the sauce.

To make this, wash and drain off the fresh herbs then add them to a food processor.

Follow with the yeast, tahini, garlic clove, butter beans, and a splash of water, then blitz to a thick sauce that’s light green.

Divide the couscous across four plates and quarter the cauliflower. Top with the sauce, pomegranate seeds and parsley then serve.
