Chef's cheesy jacket potatoes taste 'like garlic bread' and are 'delicious' – recipe


Jacket potatoes, which are also known as baked potatoes, are a popular dish in the UK and can be accompanied by a plethora of different toppings.

Most people serve their jacket potatoes with butter and grated cheese but some like to top theirs with baked beans or tuna mayonnaise.

Today on ITV’s This Morning, TikTok star and Michelin-trained chef Poppy O’Toole, shared her star-crossed garlic jacket potato recipe.

Poppy, who calls herself the “potato queen”, has 4.3 million followers on TikTok and 814,000 on Instagram.

The chef shared three recipes on today’s show which also included the lemon roast potatoes and beef-fat fried chunky chips.

She said: “I’ve been shouting about potatoes for four years now on the internet and how amazing they are.

“So I’m going to show you a few ways to do the things that we know at home but put some extra stuff in and make them even more delicious.”

Poppy’s recipe takes 50 to 60 minutes to cook and promises “roasty toasty delicious” jacket potatoes.

How to make star-crossed garlic jackets

Serves: 2

Ingredients

Two Maris Pipers

Eight cloves of garlic, confit or roasted

100g cream cheese

Splash of confit garlic oil (or a splash of olive oil)

50g melted butter

Small handful of parsley leaves

Salt and pepper to season

Method:

1. Firstly, preheat the oven to 200C fan.

2. Next, smother your potatoes in oil and salt before placing them on a rack in the centre of the oven. Bake your potatoes for around 45 minutes. This may vary depending on the size of the potato.

3. Combine three cloves of confit garlic with the cream cheese and seasoning. Make sure to use enough of the garlic oil to create a thick creamy consistency.

4. Melt the butter and squeeze out the rest of the confit garlic, adding it to the butter along with the parsley.

5. Next, remove your potatoes from the oven and slice each one into a six-point star. The potatoes should not be cut all the way through but enough so that the centre is exposed. Fill the cuts with the garlic cheese mixture.

6. Once filled, cover the potatoes in the garlic butter and parsley and add a sprinkle of salt.

7. Place them back in the oven for 10 minutes to crisp up.
