Broccoli is a vegetable rich in health benefits. It is an excellent source of vitamins, particularly vitamin C and vitamin K. Additionally, it contains phosphorus, potassium, magnesium, omega-3 fatty acids, iron, zinc, and numerous other essential nutrients. While the veg is essentially a superfood, it can often taste quite bland, leading people to avoid it.
However, a recipe developer has revealed how to make “the best broccoli of your life”. Erren Hart shared the easy recipe on her website Erren’s Kitchen, after spotting it on another cooking blog, and all it involves is adding a few extra ingredients to create a “delectable” side dish that you can enjoy with a range of meals.
Roasted broccoli with garlic, lemon and parmesan dish is the way to transform the nutritious vegetable into “the perfect side dish for almost any meal”, and according to Ms Hart, there are three reasons as to why the recipe works.
She wrote: “Cooking broccoli in high heat caramelises the outside, creating crispness and a sweet, nutty flavour. The crisp caramelised outside of the broccoli contrasts well with the tender insides of the florets.
“The nuttiness of the roasted garlic and broccoli combined with the saltiness ot the cheese and sour lemon is fantastic.”
Step 1
Preheat the oven to 400°F/200°C.
Step 2
Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to each floret, and discard the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets.
Step 3
Place the broccoli florets on a large enough sheet pan to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons of olive oil. Sprinkle with the salt and pepper.
Step 4
Roast for 20 to 25 minutes, until the florets are crisp-tender and the tips of some of them are browned.
