‘Best’ place to keep peppers fresh and crisp for over 14 days – stop mould or dark spots


It might seem obvious to simply store your bell peppers in the refrigerator, but improper storage might be causing them to quickly become wrinkly and spoilt. 

Peppers have a high water content, and when exposed to the humidity and cold temperature in the fridge they can become rotten or even begin mouldy at a faster rate. 

They are also highly sensitive to ethylene gas, a natural plant hormone produced by certain vegetables such as onions, garlic and potatoes which can accelerate the ripening of nearby produce. 

There is an easy way to keep peppers “fresh, crisp, and delicious” according to expert Kristin Marr is a busy mum, cook and founder of LiveSimply who has shared the “best way” to store them.

Kristin shared that her simple food storage method takes minutes to do but can make bell peppers last at least two weeks longer.

How to store bell peppers to keep them fresh. 

Peppers should always be stored in the crisper drawer of the fridge but need to have their original plastic packaging removed before being put away.

Kristin said: “Excess moisture can build up in the plastic, so the better option is to set those peppers free!” 

To shield peppers from ethylene gas and the humidity in the fridge, bell peppers are best placed in a reusable cotton or mesh produce bag which can be bought on Amazon. 

These bags will keep the peppers cool and help lock in their moisture as well as protect them, which will help them keep fresher for longer. 

Kristin added that peppers do not need to be washed right away if they are not being used to cook with. 

She said: “If you choose to wash the bell peppers, make sure they are completely dry before placing in the crisper drawer. Any water left on the peppers will cause premature spoilage: mould growth, slime, and black spots.”

If you half your pepper, it will shorten its shelf life but can still last longer as long as the unused half has the stem and seeds still attached to it. 

Kristin said: “Keeping the seeds and stem attached will keep the halved green bell peppers (or red peppers or yellow peppers) fresh for longer (about one week).” 

Any pepper strips or slices should be used immediately, but one storage top tip is to place them in a glass and airtight container with a paper towel at the bottom, which can help keep them fresh.

Kristin explained: “The paper towel method will give you the best results: absorbing the moisture content of the peppers and extending the life of sliced and cut peppers for up to seven days (or longer).”
