These air-fryer egg cups are versatile and super easy to make, whether you’re preparing brunch for the whole family or just wanting to have a quick breakfast before getting on with your day.

These little savoury cups contain tender, fluffy eggs baked to perfection, along with your favourite vegetables, and topped with a melty layer of cheese.

The secret lies in cooking them in the air-fryer, which locks in all the moisture, making eggs irresistibly soft and satisfying in no time.

If you want to add some extra protein and flavour, try including some bacon or sausage in the mixture before cooking.

Ingredients

Non-stick cooking spray

Four large eggs

One cup diced vegetables

One cup grated cheese

Four tablespoons double cream

One tablespoon fresh chopped coriander

Salt and freshly cracked black pepper

Method

Lightly grease four ramekins with non-stick cooking spray to ensure nothing sticks during the cooking process.

In a medium bowl, whisk the eggs until well beaten. Add in your diced veggies, half of the grated cheese, double cream, chopped coriander, and season generously with salt and pepper. Stir everything together until combined.

Pour the egg mixture evenly into the greased ramekins, making sure they’re all filled to the brim. Place the ramekins in the air-fryer basket and set the temperature to 150°C (300°F).

Cook for 12 minutes, allowing the eggs to set while staying beautifully fluffy and moist. Sprinkle the remaining cheese over the top of each egg cup and set the air fryer to 200°C (392°F).

Cook for another two minutes to melt the cheese and give it a lovely golden-brown finish. Remove from the air-fryer and let cool slightly before eating.
