Never struggle to make creamy scrambled eggs again when cooking – all you need to add is one ingredient. In a TikTok video from the experts at Delish from June 2024, they tackled the humble scrambled eggs.
Delish’s food editor Francesca Zani shared her secret ingredient for making her scrambled eggs the ‘creamiest’ you’ll ever eat. It’s slightly unconventional, but the results are ‘better than anything’ she’s ordered at a restaurant. Before you even start thinking about whisking, Francesca advised to always salt them before cooking. While whisking, add a little more salt.
The whisked eggs should then be allowed to sit for ten to 15 minutes. Francesca said: “This is going to help break down the proteins in the egg.”
But Francesca’s real secret for the creamiest eggs? Adding sour cream or Greek yogurt to the mix.
She said: “My next trick for making creamy, fluffy eggs is adding sour cream or Greek yogurt, just a little.”
Add a little knob of butter to a frying pan, making sure that it’s warmed over a medium-high temperature. Pour the eggs into the pan, allowing them to begin to set.
Once the eggs begin to set, push or pull away with a spatula. Then allow the eggs to set again for a few seconds, before repeating the same ‘pushing away’ process.
Keep repeating until the eggs are cooked. Francesca said: “It creates those really pretty curds. It depends on how scrambled you want it to look. If you want it to look like fine curds, you have to keep pushing or whisking it in the pan.
“If you want the larger curds, you let it set for a couple seconds longer and then push in.”
Once you’ve reached your desired cook, remove the scrambled eggs from the pan and serve on toasted slices of bread with your choice of herbs and sauces.
Francesca then compared her eggs to an example which had salt added and was cooked straight away.
“No right or wrong way to salt these, but because of the sour cream they’re so much fluffier than they would be without it.
“Bigger curd, smaller curd, whatever you’re vibing in the kitchen that day, make sure you add the sour cream, though. These scrambled eggs are better than anything I’ve ever ordered.”
