Mary Berry has shared a plethora of recipes throughout her career, including her simple scone recipe. Scones are delicious and super easy to make, perfect with a cup of tea and sandwiches.
The recipe, from Mary Berry’s Fantastic Feasts, makes 16 small scones, and they take just 12 to 15 minutes to bake. The recipe notes said: “This scone recipe makes the perfect tea-time treat, whether jam-and-cream-topped, in whichever order you like, plain or packed with sultanas.”
Ingredients:
For the scones:
450g self-raising flour
Two teaspoons of baking powder
50g caster sugar
100g butter, slightly softened, cut into pieces
Two free-range eggs
A little milk
Handful of sultanas, optional
To serve:
Strawberry jam
Clotted cream
Method:
Start by preheating the oven to 220C or 200C Fan and then lightly grease two baking trays with butter.
Put the flour, baking powder and sugar in a large bowl before adding the butter and rubbing in with your fingertips until the mixture resembles breadcrumbs.
Crack the eggs into a measuring jug, then add enough milk to make the total liquid 300ml. Stir this into the flour to make a soft, sticky dough.
Turn this out onto a lightly floured surface, kneading lightly and working in the sultanas, if using. Roll out to a rectangle about 2cm thick.
Cut into as many rounds as possible with a 5cm cutter and place them on the prepared baking trays. Brush the tops of the scones with a little milk.
The milk wash on scones primarily enhances their visual appearance by creating a shiny, golden-brown crust.
However, it also helps to seal the dough, which potentially leads to a better rise and a more tender crumb.
Bake for 12 to 15 minutes, or until the scones are well risen and golden-brown. Lift onto a wire rack to cool.
To serve, split the scones and serve with jam and cream whilst still warm alongside a cup of tea.
