Making the perfect roasties isn’t easy but this one ingredient could be a game-changer to give them some extra flavour. First though, you have to get your roasties just right.
To make your roasties perfect, the first crucial step is the heat of the fat that you cook your potatoes in. If it’s not super hot, you won’t be able to create the perfect potato.
Goose fat has a very high smoking point and tastes good which makes it perfect for roasting your potatoes in but for this recipe if you prefer, you can use regular oil.
The size of your potatoes is also important – they should be reasonably small so that the ratio of crunchy outside to fluffy interior is optimised.
And then? Adding harissa paste to your spuds will ensure they’re packed with flavour and ready to serve to your friends, family, or for a weeknight meal. Harrissa paste is a spicy condiment you can add to your potatoes which will bring a smokey heat to your meal.
Once you’ve parboiled your potatoes, you should toss them with oil, salt and harissa, then roast until crispy on the outside and tender inside. You should then preheat the oven to 250°C/230°C fan/gas mark 9. Roast for 30 minutes until crispy and don’t forget to turn them half way through, once they’re done.
You can even put on a double dose of harissa – some before roasting and an extra tablespoon after they come out of the oven for maximum flavor.
