There’s nothing more annoying than a cold taking hold of you when you’ve got a jam-packed weekend ahead that you’re really looking forward to.
You feel bunged up, all you want to do is sleep, and you can’t stop sneezing no matter what you do.
You may find yourself reaching for medicine to alleviate your symptoms, desperately trying to get the cold to leave your system so your friends actually still want to hang out with you come Saturday.
TikToker @_emilysworld shared the soup that she made her boyfriend “three times” to get him on the road to recovery, claiming that it really worked thanks to the nutrition she managed to pack into it – and she encouraged others to follow suit.
“It’s comforting, nutrient-packed and perfect with some chunky slices of buttery bread,” she gushed.
Emily continued: “Packed with immune-boosting ingredients, this quick and easy roasted veg soup is the perfect pick-me-up when you’re feeling under the weather! It’s high in vitamin C & A, rich in antioxidants, and your gut will LOVE it”. It also boasts plenty of protein thanks to ingredients such as butter beans and chickpea-laden hummus.
Emily then shared how she made her soup, saying that you need to “add a pepper, tomatoes, carrots, red onion, garlic, and butter beans to a tray” first.
Then you should “season with olive oil and salt, mixed herbs and chilli flakes,” before baking it at “200 degrees for just 35 minutes”.
Next, add “hummus and balsamic vinegar,” then “blend it all up with vegetable stock and water”.
You’ve then made Emily’s “get well soon soup” which made her boyfriend feel loads better when he was run down.
In the comments, someone complimented the soup, writing: “This was delicious! I like a sweet soup but find squash or sweet potato a bit too sickly, so I loved the balsamic vinegar addition!”
