Broccoli will be ‘next level’ if you add 3 ingredients recommended by chef

Boiled vegetables can be extremely bland and unexciting to eat, but it’s incredibly easy to make them the star of your next roast dinner. Not everyone enjoys broccoli, but one chef shared his simple recipe that uses only a handful of ingredients to make it much tastier.

Chef Stephen Beaddie enthused about broccoli in a recent TikTok video, saying his recipe with make the “perfect side dish for any meal”. Stephen said: “This is how you take your tender stem broccoli to the next level. None of my broccoli content does well, but here’s another one.

“I like making it, I like eating it.”

You won’t need to boil your greens again, simply cook it in a frying pan instead to “get a good bit of colour on it”. Stephen has a few ingredients on hand to infuse the broccoli with flavour.

For a burst of flavour add garlic and red wine vinegar. To help ensure the broccoli is tender, add a splash of water to create steam.

Before serving, you’ll want to add lashings of Parmesan cheese.

Stephen’s video has been viewed over 538,200 times, receiving 23,100 likes and 75 comments. A number of foodies shared their love for broccoli and their own suggestions in the comments.

Jonathan said: “I’ve started just firing it in the air fryer…bit of oil, seasoning in a bowl, 5 mins in air fryer. crispy flower, cooked through, flavoursome. finish with parmasen.”

Another wrote: “I put it in the oven with some olive oil, seasoning and garlic granules. Love it.”

Wally commented: “I steam it with a bit of rock salt, doesn’t need anything else.”

James suggested, “I like doing it Wagamama style – sliced garlic, in, brown off. In goes tenderstem – pair with pak choi green beans or mangetout. A load of light soy sauce and black pepper. Let it steam whilst being al dente. Boom,” while India replied, “This is the kind of veg I want to be eating not boiled veg.”

To take your next broccoli side dish to the next level, this is what you’ll need to do.

Ingredients

  • 200g tenderstem broccoli
  • One tbsp olive oil
  • Two cloves garlic, finely chopped
  • Salt to taste
  • One tbsp red wine vinegar
  • Three tbsp water
  • Parmesan

Method

Heat the olive oil in a hot pan. Add the tenderstem broccoli and let it sit for a couple of minutes to get a bit of colour on it.Toss it around, ensuring it cooks evenly.

Toss in the chopped garlic and season with a pinch of salt. Stir it for another minute to allow the garlic to release its flavour.

Deglaze the pan now by adding the red wine vinegar, letting it cook off for a minute. Then, add in the three tablespoons of water—keep the pan hot so the water steams the broccoli and cooks it through.

Once the broccoli is tender and the liquid has mostly cooked off, add the Parmesan into the pan, stirring it so it melts into the broccoli and coats everything.

Finish with extra parmesan and a drizzle of olive oil.
