Eggs are the perfect breakfast meal and incredibly versatile, allowing you to doll them up however you like. To celebrate World Egg Day, top chef Angela Harnett whipped up one of her favourite fried egg recipes for her podcast Dish, alongside co-presenter Nick Grimshaw.
However, there’s an extra ingredient Angela added in to give her eggs even more flavour. In a recent TikTok video, Angela showed how she makes fried eggs ‘Michelin-worthy’. The video’s caption read: “Michelin star eggs anyone?”
Firstly, in a hot pan, add a “serious” amount of good quality butter. Crack in three eggs, and gently manoeuvre the egg whites close to one another with a spoon to help them keep their shape.
Add a little bit of fresh sage, which Angela described as “delicious”. Follow with a sprinkling of chilli flakes.
Nick said: “I like it when they look all bubbly, voluptuous like that.”
Here is where you add the secret ingredient for a flavour bomb: anchovies. Add a few anchovies and a little bit of the anchovy oil, too.
Keep frying to allow the anchovy to melt a little bit. Take the pan off the heat and then baste the eggs in the butter from the pan.
Angela recommended serving the eggs with a slice of toast. Once on the plate, cover the eggs with the remainder of the anchovy butter. The pair described the dish as looking “delish”.
The video has already been viewed over 49,600 times, receiving 1,808 likes and 16 comments. One viewer said: “Fried eggs so underrated.”
Another wrote: “I never know whether or not I’m supposed to flip them, so you’re saying don’t flip – got it!”
