The weather has taken a chilly turn this week, signalling the beginning of autumn – and what better way to welcome the new season than with a bit of baking? It’s the perfect cosy activity, and rewarding too, as you’ll have a delicious treat at the end of the process.
If you’re a beginner baker or simply want something easy, then you really can’t go wrong with a batch of cookies. Chewy, decadent and stuffed with chocolate chips, they’re perfect when paired with a warming cup of tea or coffee. And if you’ve been on the hunt for the perfect recipe, then top baker Jane’s Patisserie has just the thing.
Jane’s easy recipe promises a batch of ‘utterly delicious’ chewy chocolate chip cookies, and unlike most recipes, you don’t have to chill the dough at all – making it a quick one too.
Most of the ingredients you’ll need are basic cupboard staples, and to show how simple the recipe is to make, Jane took to TikTok in a recent video. She mixed everything by hand, proving you don’t need pricey equipment to be a skilled baker.
She said: “These delicious cookies are perfect when you want a quick cookie fix as they don’t require chilling. I absolutely love the texture of these – soft, chewy and crunchy all at once with as many chocolate chips as your heart desires.”

Method
To make these cookies, preheat the oven to 190ºC/170ºC Fan and line two large trays with greaseproof paper.
Melt the butter slowly, then leave to cool for a couple of minutes. Then beat in both the light brown soft sugar and granulated sugar until they are all thoroughly combined.
Add the egg, egg yolk and vanilla extract and beat the mixture until the mixture becomes much lighter in colour, is smooth, and has increased in volume.
Add the plain flour, bicarbonate of soda, and sea salt and beat again until smooth. Then, fold through the chocolate chips.
Using a 5cm scoop or just a spoon, portion the cookies onto the trays, putting six on each. Make sure there is plenty of space between them.
Bake the cookies in the oven for 12-13 minutes for softer chewy cookies, or 15 minutes if you want them a bit crunchier.
Leave the cookies on the tray for five minutes after they have finished baking, and then transfer to a wire rack and continue to cool. Then, serve and enjoy.
