BBQ chicken is a flavourful and satisfying dish made by grilling or baking chicken and smothering it in a rich barbecue sauce. This sauce typically blends tomato paste, vinegar, brown sugar, and a mix of spices to create its distinctive smoky, tangy taste with a sweet-and-savory balance.
The cooking method enhances the chicken’s tenderness while the sauce adds depth and boldness, making BBQ chicken a popular choice for gatherings, family dinners, or casual meals. You can use whole pieces like drumsticks and thighs, or slice up boneless breasts for sandwiches, wraps, or salads. However, cooking experts have revealed the dish gives a bold and “wholesome” flavour by just adding one ingredient.
Experts from California Walnuts shared a recipe that is packed with protein and built a balanced plate. According to the experts, adding a handful of these walnuts will enhance the taste.
They said: “BBQ Chicken with Loaded Veggies and California Walnuts brings bold flavour and texture, with a sticky California walnut marinade, roasted chicken and a medley of beans, broccoli and sweetcorn.
The dish is high in protein, providing 16g per 100g – a generous 59g per serving, which is 118 per cent of your RI per serving.”
To prepare this dish, start by mixing all the marinade ingredients and coating the chicken thoroughly, then let it marinate for 1-2 hours to absorb the flavours.
Preheat your oven to 200C (gas mark 6), place the chicken on a baking tray, and roast it for 25-30 minutes, keeping the leftover marinade aside.
While the chicken cooks, blanch the broccoli and edamame beans in boiling water for a few minutes, then drain.
In a large frying pan, heat some oil and stir-fry the blanched vegetables along with borlotti beans, walnuts, and sweetcorn, adding the reserved marinade and chicken juices for extra taste.
Finally, slice the roasted chicken and serve it alongside the vibrant vegetable mix for a wholesome, delicious meal.
