Salmon is the perfect dinner for when you need something quick, yet still delicious and healthy. No matter which way you cook it, it’s often ready in less than 15 minutes, and tastes lovely with rice, potatoes, pasta and so much more.
It has a deliciously fresh taste on its own, but adding certain ingredients can make it even more juicy and flavoursome. And it doesn’t have to be complicated either, as the simplest products sometimes work the best. Recipe creator That Foodie Jess recently took to Instagram to share her easy salmon recipe, which involves a tasty marinade that’s made from cupboard staples.
Marinating your salmon is a must-do task, as this is what’s going to really lock in that flavour and make the dish so much more delicious. Jess’s recipe uses just four ingredients to create a ‘flaky and juicy’ portion of salmon, which she paired with sticky rice and a tasty homemade slaw.
You only need to marinate for around 30 minutes, with the salmon itself taking a maximum of 10 minutes to cook, making it the perfect speedy weeknight dinner.

Method
In a bowl, mix together the miso, mirin, soy sauce and sugar. Coat the salmon fillets in the sauce and let it marinate for at least 30 minutes.
While you’re waiting, toast the sesame seeds in a pan over medium heat for around eight minutes until brown, then ground finely with a pestle and mortar. To a bowl, add the cabbage, sesame seeds, and the rest of the slaw ingredients, and mix until combined.
Cook the rice according to the packet instructions. Grill the salmon for around six to 10 minutes depending on how well done you like it, then plate up with the rice, slaw, and spoon some of the leftover marinade on top.
