As summer ends and the weather begins to cool down, instead of firing up the barbecue, enjoy a hearty yet refreshing meal with homemade chicken gyros. This Greek dish is the perfect balance between fresh and hearty and, with this air fryer method courtesy of Myriad Recipes, it takes less than 30 minutes to make.

Ingredients
For the salad:
- One large tomato
- One red onion
- Fresh parsley
For the chicken:
- Skinless and boneless chicken thighs
- Garlic
- Mixed herbs
- Salt
- Black pepper
- Lemon
- Olive oil
For the chips:
- Potatoes
- Olive oil
- Black pepper
- Salt
For the Tzatziki:
- Greek yoghurt
- cucumber
- Garlic
- Lemon
- Salt
- Black pepper
Method
To begin with, marinate the chicken thighs in the prepared marinade. Cover and set aside for at least 20 minutes (or up to 24 hours in the fridge).
Emily said: “The longer you marinade the chicken for (up to 24 hours), the tastier the meat will be. You could also do this with pork or tofu.”
Meanwhile, cut the potatoes into one cm wedges and toss with olive oil, salt, and pepper. Place them in one side of your air fryer. Thread the marinated chicken onto two skewers and place them in the other compartment.
If you only have one air fryer drawer rather than two, cook the chicken first and then the chips in the air fryer. Cook both at 200°C for 16 minutes, flipping the chicken and chips halfway through.
During the cooking process, prepare the tzatziki by mixing all the ingredients in a bowl. Chop the red onion, tomato, and parsley. Once cooked, slice the chicken off the skewers into chunky, bite-sized pieces.
Warm or lightly toast your flatbread, then assemble: spread tzatziki, add chicken, fries, tomatoes, red onion, parsley, and another drizzle of tzatziki. Roll into a gyro, then serve.
