While it’s challenging to create a carrot cake that’s overly dry, preventing it from becoming too soggy or wet proves tricky for some home bakers. However, one TikTok recipe creator has revealed her fail-safe method that produces “the easiest most delicious carrot cake” every single time. And it is surprisingly quick.
The baking expert, known as @themodernnonna, insists that the mixture requires just “a few minutes” to prepare and uses no complex ingredients.
Carrot cake can be too wet due to several factors, including excessive moisture from the carrots, incorrect ratios of wet and dry ingredients, or over-mixing the batter.
Improper baking time or temperature can also lead to a soggy centre, but @themodernnonna’s recipe has careful instructions.

Carrot cake recipe
- Two large eggs
- 110g granulated sugar
- 100ml oil (avocado or sunflower oil)
- 170g large grated carrots
- 180g plain flour
- 2.5 teaspoons baking powder
- Two teaspoons of ground cinnamon to taste
- 1/8 teaspoon ground nutmeg
- One cup of whole walnuts to taste (optional)
Cream cheese frosting
- 113g softened cream cheese
- 60g softened butter
- Half a teaspoon of pure vanilla extract
- 120g icing sugar
