Explanining the benefits of adding cream cheese, the cooking pro said: “It adds a gentle, tangy flavour and really enhances the natural creaminess of the avocado.
“Plus, you’ll find that cream cheese takes on a lot of similar flavours that avocado does.”
While avocado can be served on its own, the cook suggested adding some hash browns or breakfast potatoes for those who want an extra filling breakfast or lunch.
Ingredients (serves four)
Four slices of bread, preferably sourdough
Two avocados, peeled, pitted and finely sliced
120g of full-fat cream cheese, or as needed
Four teaspoons of fresh chives, finely diced
Half a lemon
Extra virgin olive oil, for toasting the bread
Chilli flakes, to taste
Flaky sea salt and pepper, to taste
Method
Start by drizzling one side of each slice of bread with oil before placing it in a pan, oil-side down, over medium-high heat.
Drizzle the other sides with more oil, then toast both sides until crisp and lightly charred. Depending on the size of your pan, you may need to do this in batches.
While the bread is toasting, slice up your avocados. Slicing the avocados gives them another layer of texture instead of mashing them, which blends them right in with the cream cheese.
Spread toast with cream cheese, then sprinkle with chives. Add sliced avocado, then top with a squeeze of lemon juice, chilli flakes, salt, and black pepper to taste.
