Strawberry mousse is one of those desserts that can look elaborate if presented nicely, but don’t actually require spending hours cooking. This simple version can be prepared in just 15 minutes, and after that, it only needs an hour in the fridge to chill. It’s light, airy, and, best of all, only calls for three ingredients.

How to make strawberry mousse
Ingredients
- 400g strawberries
- 100g caster sugar
- 300ml double cream
Method
Firstly, set aside four nice-looking strawberries and set them aside for garnishing the mousse later.
Remove the stems from the remaining strawberries, then coarsely chop them. Place the chopped strawberries into a blender or food processor with the sugar and blend until completely smooth.
Whip the cream until it forms firm peaks. Scoop out about four tablespoons of the strawberry purée and set it in a small bowl.
Gently fold the rest of the purée into the whipped cream, mixing until the color is uniformly pink. Evenly distribute the reserved purée into four ramekins or small serving glasses.
Spoon the mousse mixture on top. Refrigerate for a minimum of one hour.
The mousse can be kept chilled for up to 24 hours.
When ready to serve, slice the reserved strawberries in half and place them on top as decoration.
