Scrambled eggs is one of those classic dishes that never gets old, no matter how many times you make it. Whether you’re serving them with avocado on toast or as part of a full English, the light and fluffy eggs are hard to beat – and it’s so easy to make them.
Having said that, there are a few things that can go wrong when crafting this breakfast dish. One common problem is watery, runny eggs, which are never pleasant to eat. Some chefs hail milk as the key ingredient to stop this from happening, but according to one expert, the secret lies in a completely different addition.
The hack was shared on TikTok by the culinary experts at Delish who lifted the lid on how to make “perfectly fluffy” scrambled eggs – just like you’d find in a restaurant.
Instead of adding milk to the eggs as you whisk them, which is something that many people swear by, the experts recommend adding a splash of water instead.
As odd as it may seem, there’s science behind it. The pro said: “The dairy proteins cook at a different rate to the egg proteins, and this can result in watery eggs.”

Ingredients
- Four eggs
- Pinch of salt
- One tbsp water
- Butter or oil for the pan
Method
Crack the eggs into a bowl. Add the salt and give them a good whisk – the salt will help to break down the proteins in the egg, making them easier to mix. Then, add the water and mix the eggs again, before leaving to sit for 10 minutes.
Grab a nonstick pan and place it over a medium high heat, which is crucial for creating those fluffy curds. Drizzle a bit of oil in, or melt some butter, to make the eggs extra creamy.
Cook the eggs for a couple of minutes, using a spatula to push them around the pan when they start to thicken up.
The “most important thing to remember”, however, is to take the eggs out of the pan when they are still “slightly wet”. The expert explained: “They’re going to keep on cooking even after they hit the plate.”
Showing off the perfectly creamy eggs on toast, she added: “Follow these rules and your eggs will come out just like this every time.”
