Breakfast and sweet treats never have to be boring again with this super speedy recipe that turns pancakes into an actual cake. Journalist and digital food creator Laura, also known as Cake on the Run, detailed a scrummy recipe for anyone in need of a quick brekkie or pick-me-up.
In an Instagram post from July 2024, Laura shared a demonstration of her recipe. The treat can be made entirely in one single mug, so there’s no need for hours of washing up. To add flavour to her creation, Laura chose jam and chopped pistachios.
You’ll only need four ingredients to whip up Laura’s recipe, all of which you probably already have in your kitchen cupboards.
What’s even better is that the cake can be cooked in the air fryer, and it only takes seven minutes to cook. But don’t worry if you don’t, as oven baking the cake will take just 15 minutes to complete.

If you have dietary restrictions, it is also possible to make this dessert gluten-free. Laura advised to swap out the self-raising flour for a gluten-free alternative. She explained that you will need to add a quarter of a teaspoon of xanthan gum to the mix as well.
Ingredients
- 100g self raising flour
- 130ml milk, any of your choice
- One tsp jam
- One tsp chopped pistachios
Method
Put milk and flour into any small ovenproof dish and mix to a smooth batter. Drop jam into the middle of the batter and sprinkle over the nuts.
Air fry at 180℃ for seven minutes or bake in the oven for 15 minutes, or until lightly golden and cooked in the middle.
Dust with icing sugar, if doing so, and eat straight away.
