Ruth Langsford has revealed her favourite salad recipe for lunch with friends – and it’s ideal for summer weather. The Loose Women star, 65, shared her dish on Instagram and received widespread praise from fans.
“I’ve got my roller in again getting ready for friends to pop round, and thought I’d share one of my favourite summer dishes,” she said on Instagram on Thursday. “This is my colourful, no-cook salad. I throw in whatever I’ve got in the fridge (I always scoop out the seeds from the cucumber and tomatoes so it’s not too wet!).”
Ruth’s colourful salad recipe is incredibly easy to prepare. She began by showing viewers a large empty salad bowl before simply adding each of her ingredients individually.
Although she mentioned this can include anything you’ve got in the fridge, Ruth used these ingredients:
- Chopped red and orange peppers
- Tomatoes (seeds removed)
- Chopped radish
- Sliced red onion
- Spring onion pieces
- Beetroot (if you like it)
- Chopped avocado
- Lettuce leaves
- Cucumber pieces (seeds removed)
- Chopped celery
- Sliced carrot
In a videoed step-by-step guide, Ruth said: “I always do the avocado last, actually, otherwise it goes brown. And you just start to gently [mix] – I mean, like I need to teach you how to make a salad beautifully.
“And you can put some herbs, some parsley, in there, some basil, whatever you like. But it is just so colourful. I think we’ll garnish with a little bit of cress.”
To make her salad dressing, Ruth used a nifty ‘girl gadget’ she purchased from Amazon. She explained: “So, this shaker jar gives you recipes. French dressing, honey and mustard dressing, and it tells you how much oil to put in.
“…And then, what else? Sugar, honey, you know, whatever. And then you just give it a shake. Easy, easy, easy. And then dress your salad.” The TV star also bought a rotisserie chicken to go with her salad and placed it on a separate plate for guests to serve themselves.
In the clip’s caption, she added: “I usually serve the salad with a shop-bought rotisserie chicken so everyone can help themselves. Easy, light, tasty, and perfect for sharing. My kind of summer food!”
Ruth’s recipe rapidly garnered a flood of comments from fans and celebrity friends, many praising the straightforward yet effective concept.
Among them was former X Factor judge Dannii Minogue, who wrote: “More recipes please. Love this. I would add a plate of salmon for non-meat eaters – I like to sear it then bake till just pink in the centre.”
On the other hand, stand-up comedian Lee Peart said: “Beetroot is underrated and belongs in every salad it’s a yes from me.” Another fan joked: “Coming to Ruth’s house for lunch with my little plate in hand.”
