There aren’t many meals that aren’t instantly made better with a portion of chips on the side. This classic comfort staple is so delicious, whether served with burgers, salads, or simply with a sauce for dipping.
However, it’s no surprise that they aren’t always the healthiest. This is why having a good homemade chips recipe up your sleeve that you can whip out whenever is a good idea. And if you struggle with making them crispy, then one key step could transform your fries from now on.
Chef Ailsa Burt recently took to the Good Food Everyday Instagram page to share her ‘secret’ for the best, crispiest and most golden chips that can be made in the air fryer.
According to the pro, taking the time to carry out an extra step in the cooking process can make the world of difference when it comes to creating that perfect crunchy exterior – and it requires almost zero effort.
The ‘absolute winner of a recipe’ involves soaking the uncooked fries in water before cooking them, which removes excess starch and makes them crispier. In the caption, she continued: “If you love those skin-on fries from your favourite burger place, you can recreate them at home with your air fryer.”
Here’s everything you need to recreate this recipe at home.
Air fryer chips
Ingredients
- 1kg floury potatoes (such as King Edward or Maris Piper), cut into chips
- One tbsp vegetable oil
- One tsp garlic powder
- Two tsp dried oregano
- One tsp paprika
- One tsp fine sea salt
Method
Put the potatoes into a large bowl and cover with cold water. Leave to soak for 30 minutes as this will remove excess starch and help them become crispy.
Drain well and shake them dry before tipping out onto a clean tea towel. Pat them dry with a second clean tea towel, making sure they are as dry as possible.
Heat the air fryer to 200C. Toss the dried potatoes with the oil, then sprinkle over the garlic powder, salt and some pepper, and stir again.
Tip them into an air fryer basket, ensuring they are in one even layer. You might have to cook in batches if you have a smaller air fryer or they won’t crisp up.
Cook in the air fryer for 15-20 minutes, shuffling once or twice, until golden, crispy and cooked through. Transfer to a serving dish and serve with whatever dips you like.
