The 15-minute pasta recipe that ‘adds a fiery kick to much loved classic’

This delicious pasta meal is the perfect way to spice up your dinner and by adding one ingredient, you can transform the taste of your dish. Nduja will add a fiery kick to your pasta, adding a tasty spicy kick that will leave your meal with extra flavour.

The easy recipe is suggested by BBC Good Food, it says: “This spicy take on a carbonara uses ’nduja, a soft, spicy sausage from Calabria in southern Italy. It adds a fiery, slightly funky kick to the much loved classic.” It’s an easily achievable recipe to make at home and you might enjoy this one so much that it could even end up being on your weekly meal roster.

First, you will need to cook your spaghetti in boiling salted water according to the packet instructions.

While you’re doing this, you then need to beat the eggs, parmesan and pecorino in a small mixing bowl with some freshly ground black pepper.

After this, heat the olive oil in a large frying pan over a medium heat before adding the nduja, breaking it up with a wooden spoon.

Once it has softened, add the garlic and cook, stirring frequently, for one minute.

When this is done, you will need to drain the spaghetti and add it to the nduja mixture. Make sure to give it a good stir.

Whisk a ladleful of the pasta cooking water into the egg mixture and pour it into the nduja and pasta mixture. Make sure to save a small amount of the pasta cooking water.

Make sure to stir this until the cheese has melted and formed a glossy sauce, adding a little more pasta cooking water if needed. To serve, add parmesan and black pepper.

This meal can be cooked in around 15 minutes and it’s one that will taste like you’ve spent much longer on.

It’s the perfect meal to make for a week night dinner if you don’t have much time or it could even be one you rustle up for guests if you’re hoping to make something that’s not too complicated.

You will need:

  • 400g dried spaghetti

  • 4 free-range eggs

  • 50g Parmesan, finely grated, plus extra to serve

  • 50g pecorino, finely grated

  • 1 tbsp extra virgin olive oil

  • 100g nduja

  • 2 garlic cloves, finely chopped

  • salt and pepper
