Quick and easy dinners are something everyone needs after a long day or week at work, and Mary Berry has many simple and delicious recipes to help. This includes her creamy paprika chicken, which has several five-star ratings on Good Food.
The recipe notes said: “Mary Berry’s comforting, creamy paprika chicken is a classic quick dinner that will please all comers. Serve with plain boiled rice or creamy mash to double the comfort factor.”
Method:
Lay the chicken breasts on a clean work surface, cover with cling film and gently beat with a rolling pin or meat mallet until 1cm thick.
Mix the marinate ingredients on a large flat plate, then lightly spread each chicken fillet with the mixture and season.
Leave to marinate for 10 minutes if time allows, before heating a large non-stick frying pan.
Add a little oil and gently fry the chicken breasts for just under two minutes on each side or until just done.
Remove any surplus oil from the pan with kitchen paper, then measure the cream into a jug and mix with the leftover paprika from the plate.
Pour the paprika cream into the pan around the chicken.
Allow to bubble up and reduce slightly before serving with young spinach and plain boiled rice.
Or, serve with mashed potatoes and spinach on the side, or even in a pasta dish.
