How to make sweet potato fries extra crispy and ‘insanely good’

If you’re tired of your sweet potato fries always being floppy and lacking that satisfying crunch, one food creator has shared an interesting trick to make sure they will be extra crispy.

TikToker Tom, more popularly known as Pinch of Mint, recently shared his take on some classic sweet potato fries. However, these aren’t your regular type of chips. To achieve the crispy exterior, Tom added one step to the cooking process that will guarantee a satisfying bite. In his video, Tom said: “These mashed potato fries, they’re insane! Man, they’re good.”

All you need to do is mash the sweet potatoes after boiling them.

Instead of simply par-coiling the potatoes before frying, Tom mashes them and adds a plethora of ingredients to amp up the flavour. He adds grated cheddar, garlic, and a good lashing of some seasonings.

However, you can customise the recipe to suit your own palate. Once you’ve combined the mixture together, transfer the mash to a piping bag.

Piping the fries into small strips will help them crisp up when it comes to deep frying. Tom continued: “If you love fries, then try these mashed potato fries.”

The innovative take on fries seemed to divide Pinch of Mint’s followers, with some keen to try them. Adele wrote: “They look awesome and gluten free. I’ll be making these.”

Dylan suggested, “Stick in a wee bit onion n it’s hash brown fries,” while another said. “This is so extra but best believe I’m doing this.”

While Dale said: “Got about 10 chips out of my mix as they broke up in the oil.”

However, if you want to try out these crispy sweet potato fries for yourself, this is what you’ll need.

Mashed Potato Fries

Ingredients

  • 500g potatoes
  • 60g cheddar cheese, grated
  • 2 garlic cloves, crushed
  • 4g salt
  • Good grind of black pepper
  • 60g cornflour
  • 4g paprika
  • 2g dried oregano
  • Oil for deep frying

Method

Peel and cut the potato into small chunks. Place into a pan of salted cold water and bring to a boil.

Cook for 20 minutes or until fully cooked through.

Drain and mash the potatoes and then add in the grated cheese, crushed garlic, salt, black pepper, cornflour, paprika and dried oregano. Mix until fully combined.

Place it into a piping bag and pipe it into thin fry-sized strips onto a wooden board or parchment paper.

Heat your oil to 180°C and fry in batches until golden and crisp – usually two minutes. Serve and enjoy!
