This easy chicken roll guarantees juicy, flavour-packed results in just half an hour. It takes just 10 minutes to prepare, with only a further 20 minutes cooking time in the oven. And you’ll have a delicious dinner that looks far more elaborate than it really is.
This recipe yields four servings, and was shared by Good Food, who vouched “we’d be surprised if this chicken fillet recipe doesn’t become a firm favourite.” For an even more complete meal, add a side salad or some roast potatoes.
Method
Preheat the oven to 200C (180C for fan ovens) or gas mark six.
In a bowl, combine the cheeses with the mustard until evenly mixed. Using a sharp knife, slice into the side of each chicken breast to create a pocket, then fill the pocket with the cheese and mustard blend.
Take two strips of bacon and wrap them around each filled chicken breast, ensuring they’re secure but not overly tight.
Lightly season with salt and pepper, arrange on a baking tray, and bake in the oven for 20 to 25 minutes. Serve while still hot, alongside a green salad or roast potatoes.
