I added 1 extra ingredient that transformed my daily yoghurt bowl

I’m a firm believer that breakfast is the most important meal of the day. It’s by no means my favourite, but starting the day on an empty stomach feels like I’m setting myself up for failure, especially if I know it’s going to be a busy day. It’s also, unsurprisingly, a meal many of us skip from time to time, and in fact, a quarter of Brits regularly miss out on breakfast because they don’t fancy eating what’s in their cupboard.

Figuring out what to eat for breakfast can be tricky, and it’s easy for the morning meal to start feeling repetitive. When inspiration doesn’t quite hit, it can be tempting to skip it entirely. My breakfast has stayed the same for a good few years now, and yoghurt and granola with a berry of sorts is my go-to. I look forward to my morning bowl, and often experiment with different kinds of yoghurts or brands of granola to mix it up, but I never stray too far from blueberries or raspberries for added sweetness.

While I always enjoy my breakfast yoghurt bowl when it comes to eating it, I’ve found in recent weeks that I’ve been less excited about actually making it, and naturally, it’s started to feel a bit repetitive.

But I didn’t necessarily want to have to change my go-to breakfast entirely, especially as I find yoghurt and granola keep me full until lunch, and I can make it in a matter of minutes.

Instead, I followed a recipe for caramelised and baked Jazz apple yoghurt bowl, and simply experimenting with a few ingredients, managed to transform breakfast into something that felt indulgent.

Jazz apples are known for their tart flavour, and when combined with granola, they almost replicate a warming apple crumble. While it might sound like a lot of extra effort to caramelise and roast them in the oven, it only takes a few minutes, which is enough time to make a coffee while you wait.

The recipe I followed makes coconut cream to go with it, but I simply used coconut yoghurt instead. Making a caramel sauce to drizzle over apples seriously elevated my usual yoghurt bowl, and it’s definitely something I’ll make whenever I have apples in the house.

Ingredients

  • One Jazz apple
  • One tsp olive oil
  • One tablespoon of sugar and one tablespoon of water
  • Sprinkle of cinnamon
  • Coconut yoghurt
  • Granola

Method

Heat the oven to 180C and prepare your apple. Slice and core it into four pieces, making sure not to cut them too small, otherwise the slices could risk burning.

Once the oven is warm, place the apples on a baking tray and drizzle them with oil and cinnamon. Bake for 10 minutes at 180C, until slightly soft.

While they’re baking, make a caramel sauce. Add equal parts sugar and water and bring to a boil. Leave it to bubble until it becomes sticky.

Once the sauce has thickened, remove it from the heat and place it to one side. Prepare your yoghurt bowl and add the granola. After 10 minutes, remove the apples from the oven and drizzle with the caramel sauce.
