ATTENTION popcorn fans! Today is National Popcorn Day and provides the perfect excuse to celebrate the popular treat.

When is National Popcorn Day?

National Popcorn Day falls on January 19 and provides fans with one more reason to tuck into their favourite snack.

What recipe can I do for National Popcorn Day?

This popcorn rocky road recipe is a yummy chocolate fix that’s perfect to share with pals or family.

Ingredients:

  • 30g Metcalfe’s Skinny Sweet ’n’ Salt popcorn
  • 50g mini marshmallows
  • 50g glacé cherries (whole or halved)
  • 75g dried mixed fruit
  • 200g dark chocolate
  • 50g honey
  • 50g unsalted butter
  • 1 x greased and lined 8in cake tin

Method:

Put the dark chocolate, honey and unsalted butter in a saucepan and heat on low until everything has melted and combined. Set to one side.

In a mixing bowl, combine the popcorn, marshmallows, glacé cherries and dried fruit.

Pour the chocolate mixture over the dry mixture and fold with a spatula until ­everything is coated evenly.

Transfer the mix to the lined cake tin, making sure you spread and level evenly.

You can top with extra ­popcorn, marshmallows and sprinkles.

Put the rocky road in the fridge for a few hours or overnight to set.

Once it is set, remove from the tin, cut into slices and serve.
